LABANE BALLS WITH ROASTED BALSAMIC STRAWBERRIES AND PROSCIUTTO

Disposable vinyl gloves are handy in the kitchen for messy little jobs such as peeling beetroot or rolling labane into balls. I always look out for Canaan Cheeses labane as it is very creamy. Labane, also spelt as labneh, a yoghurt based cheese is soft and very delicate. You are most likely to find it at speciality food stores.
INGREDIENTS
100g labane
Hazelnut Dukkah
Roasted Balsamic Strawberries
65g-100g (8) prosciutto slices (rolled)
8 small handfuls of baby greens
METHOD
- Roll labane into eight even-sized balls. Place Hazelnut Dukkah on a plate and drop labane balls into dukkah. Roll to evenly coat.
- Place balls on a plastic wrap covered tray, cover with plastic wrap and refrigerate for up to three days.
- Serve with Roasted Balsamic Strawberries, prosciutto and baby greens.
