HORSERADISH CREAM

Description

(makes 450ml)


Fresh horseradish is in season now. If you can lay your hands on enough, peel and grate, and then freeze until required. Serve with roast beef, oysters, smoked salmon or glorious with smoked eel. This recipe goes with Bluff Oysters with Horseradish Sandwiches


INGREDIENTS

1 tbsp fresh horseradish (peeled & grated)
2 tbsp prepared horseradish sauce

300ml cream (lightly whipped)
Maldon sea salt and freshly ground black pepper


METHOD

  • Fold horseradish and horseradish sauce into cream and season to taste.
