HOT ROASTED VINE TOMATOES

(serves 6-8)


You may prefer to use cherry tomatoes. If so increase the quantity and decrease the cooking time.

INGREDIENTS

500g (20) small round tomatoes with calyxes on

 

METHOD

  • Preheat oven to 180°C.
  • Cut a small thin slice off the base of each tomato to help it sit flat.
  • Cut each tomato in half through the waist and put the tomato back together as a whole.
  • Place tomatoes in roasting tray.
  • Bake for 5-10 minutes or till tomatoes are soft and skins are just lifting.
  • Serve warm.
