Whitebait in Toasted Bread Cases

(makes 30)

INGREDIENTS
10 slices white sandwich bread
150g butter (softened)
2 eggs
¼ cup milk
½ cup cream
flaky salt to taste
pepper to taske
250g whitebait, drained


METHOD
Preheat oven to 160°C. Using a spatula, lightly butter both sides of each bread slice and place onto baking paper.

Using a 5.5cm straight-edged cookie cutter cut 30 rounds from the sliced bread, avoiding the crusts. Press rounds into bases of baby muffin tins. The bread will come just past halfway up the sides of the tin. Place into preheated oven and bake for 15-18 minutes or till golden brown and crisp. Remove from oven and cool. Lay cases out onto greased tray.

Place eggs into a bowl and lightly whisk with a fork. Add seasoning. Divide whitebait amongst cases followed by egg mixture. Place into oven and bake for 10-15 minutes. Serve.
