Baked Side of Salmon with a Lemon, Rosemary and Honey Glaze

(serves 10-12)

INGREDIENTS
48g (4 tbsp) honey, preferably Manuka
finely grated zest 2 lemons
2 tbsp finely chopped rosemary leaves
2 cloves garlic, crushed
1 and 1/2 kg to 2kg side salmon, skin on, pin bones removed)
1-2 lemons, halved through stem-end and thinly sliced into half-moons
8 large fresh bay leaves, halved through the stem
flaky salt and freshly ground black pepper



METHOD
Preheat oven to 180°C. Line a baking tray, large enough to hold the side of salmon, with a Teflon sheet preferably, or baking paper.

To make glaze: Place honey, lemon zest, rosemary and garlic in a bowl and combine.

At 5cm intervals cut long slashes widthwise through flesh of salmon side, but not through skin. Place salmon onto prepared baking tray. Insert 2 slices lemon and 2 pieces of bay leaf into each slash.

Spread glaze over salmon and season with salt and pepper. Place in oven and roast for 15-20 minutes or till cooked to your liking. Remove from oven and allow to sit for at least 15 minutes before transferring to a long wooden board or serving platter.
